In the late 19th century pizza was introduced to American culture with the wave of Italian Immigrants.  In 1897, an Italian immigrant named Gennaro Lombardi opened a small grocery store in New York named Lombardi’s.  As a way to keep his customers happy, he started giving away slices of pizza as they waited in line.  This pizza as very simple, just a little tomato sauce on the top of dough with a sprinkle of Romano cheese for extra flavor.  Simple it was however, Lombardi’s pizzas became so popular in 1905 he opened which is considered by many to be the first official pizzeria in the United Sates.

As the popularity for pizza in America grew, so did the differences from it’s Italian ancestor, the Neapolitan pizza.  Next to the type of cheese and flour, one of the biggest differences was the type of fuel used to heat the ovens.  Coal was in abundance in the late 19th century and used as a main heat source so the bakers that arrived from Italy started using coal instead of wood.  This coal fired creation is still regarded by many to this day as the perfect pizza.
