HIGHWOOD – Why worry about coal in your stocking when you can go to SLYCE for a coal-fired artisan pizza that’s ready in three to four minutes?

SLYCE Coal Fired Pizza Company will open on Tuesday, December 19 on the site that previously housed Ginger’s (and before that Bridie McKenna’s) at 254 Green Bay Road in Highwood.

“We changed the whole floor plan to a more open concept, said Nicole Fry, SLYCE Highwood’s general manager. “The objective is that each guest has a view of our open kitchen and beautiful pizza ovens from every seat.”

She added that the biggest challenge was installing the three 7000 pound ovens that had to be brought in on a crane.

Fry, the previous general manager at SLYCE Wauconda said after seven years the restaurant decided to open a second location in Highwood. Current Executive Chef Mike McElwee is joining Fry in Highwood.

What makes coal-fired pizza different from other pizzas?

Fry said coal is the hottest and cleanest burning fossil fuel. “The high temperature allows our pizzas to cook in three to four minutes, which results in the perfect balance of char, crunch, and chew that pizza lovers crave,” she added.

Owners and mother/daughter duo Laurie and Brittany Barth are thrilled to bring their authentic Neapolitan pizza dining experience to another community-driven, food-inspired town.

In addition to the bar and dining room, SLYCE will feature the Amalfi Room, a 50 seat private dining area.

Fry described one of SLYCE’s best-sellers, the #13, which has dried figs, gorgonzola cheese, balsamic glaze and prosciutto. Other favorites include the #11 an egg pizza, and the newest addition is #16, which is made with burrata (fresh Italian cheese made from mozzarella and cream) and pistachios.

Not in the mood for pizza? SLYCE offers other popular options. For example the coal-fired lemon basil chicken wings are marinated two days before they are finished to “charred perfection” topped with fresh lemon juice and basil. The chicken wings are one of several small plate offerings that serve two.

Fry described how the coal fired  turkey and roast beef  sandwiches are prepared. The chef will brine and marinate the turkey and beef in house, and then slice them to order. The sandwiches are served on SLYCE’s homemade focaccia bread with a side or chips.

Though there are seven salads to choose from, Fry said the Sicilian Salad is SLYCE’s best-selling salad that is served with homemade sweet mustard basil vinaigrette dressing.

For pasta lovers, McElwee will create a homemade pasta dish every Thursday. “Chef Mike makes traditional dishes as well as dishes that can take guests out of their comfort zone by exploring new techniques, unique sauce styles and a variety of fresh ingredients,” said Fry.

SLYCE’s bar will serve beer and wine, as well as the restaurant’s special SLYCE Basil Ale. The dessert menu will include: SLYCE Cannoli and Italian gelato from Frost in Highland Park.

Kids will also have the opportunity to explore their creative side, as every little one that comes in will have the art of pizza making at their fingertips with a ball of dough and a sprinkle of flour at every table.

SLYCE will be closed on Christmas Eve, Christmas Day and New Year’s Day, but on New Year’s Eve, SLYCE will be offering chef specials all evening long.

“We are excited to share our concept with such a great community and I’m very much looking  forward to extending our SLYCE family to the North Shore,” said Fry. “We’re coming in hot! Who’s ready for the char?”
